Perlmutter and his son's research in their book 'Brainwash' reveals that inflammation from ultra-processed foods damages the anterior cingulate pathway connecting the prefrontal cortex to the amygdala. This creates a feed-forward cycle where inflammatory foods impair the brain's 'adult in the room' (prefrontal cortex), leading to more impulsive, self-centered decisions that perpetuate poor dietary choices. The finding links diet directly to personality changes and societal narcissism.
